Knickerbocker Glory Sundae with Caramel Peach & Summer Berry

Ingredients;

1. Full-fat milk – 500ml
2. Double cream – 500ml
3. Vanilla pods – 3
4. Golden caster sugar – 100g , plus 1 tbsp
5. Free range egg yolks – 12
6. Poppy seeds- 40g
7. Kümmel liqueur – 150ml

For the Fruit:

1. Large peaches – 3-4, ideally white flesh
2. Golden caster sugar – 150g, plus 1 tbsp for coulis
3. Large basil leaves – 8-10

For the raspberry coulis:

1. Fresh raspberries – 250-300g
2. Fresh lemon juice – 1 tbsp
3. Ripe passion fruits – 2
4. Fresh strawberries – 250g, hulled
5. Thin round crisp biscuits – 100g
6. Tuiles or cigarillos, to serve
7. Mint sprigs, to serve
8. Compare prices

Method;

• Pour the milk and cream into a saucepan.
• Flatten the vanilla pods with the back of a knife, then slit in half and scrape out the sticky seeds into the pan.
• Add the slit pods and the 1 tbsp of sugar to the liquid and bring to boil.
• Then take off heat, cool and remove the pods.
• Put 100g sugar and the egg yolks into a large bowl, ideally one with a rounded base for even whisking.
• Using a large balloon whisk (or hand-held electric machine), beat steadily until the mixture becomes pale and thick.
• Return the milk to a boil, then pour a good slurp onto the sugary yolks, beating well.
• Return the yolk mixture to the milk pan and whisk lightly for 2-3 mins, until the custard just begins to thicken.
• Place the pan on a medium-low heat and bring it almost to boiling point, whisking continually until it begins to resemble double cream.
• Remove immediately.
• Strain through a sieve into a bowl, placed inside a bigger bowl half-full of ice and water.
• You now have the vanilla ice-cream base. When cool, beat in poppy seeds and 75ml of the liqueur and chill.
• Churn in an ice-cream machine until thick – about 15-20 mins.
• Scrape into a freezer-proof container and freeze until ready to serve.

For the caramelised peaches:

• Halve and stone the peaches and cut each into 8 wedges.
• Heat a large, non-stick frying pan, then sprinkle in 75g sugar.
• Melt to a light caramel, without stirring, although you can shake the pan a little.
• Carefully lay in the peaches and sprinkle over the remaining 75g sugar, shaking the pan gently to mix the contents.
• Stir in the basil leaves and remaining Kümmel and cook for another 5 mins.
• Tip the peaches into a shallow bowl to cool, add a good splash of cold water to the caramel in the pan and reheat until it dissolves.
• Tip this over the peaches and cool.

For the raspberry coulis:

• Crush most of the raspberries in a bowl with 1 tbsp sugar and lemon juice. I use a stick blender for this, but a masher would do.
• Set aside when smooth. Halve the passion fruits and scoop out the insides into a bowl.
• Cut strawberries into spears or wedges.
• Spoon raspberry coulis into the base of six tall sundae glasses, then add about a quarter of the strawberries.
• Break over some of the biscuits, allowing one per glass, then spoon in half the peaches and some of the caramel juice.
• Press down quite well. Repeat the layers of strawberries, biscuits and peaches, with a little more coulis until just below the top of the glass.
• To assemble your knickerbocker glory, place a small, flat round biscuit in the top of each glass, then top with a large firm scoop of ice cream.
• Drizzle over the passion fruit pulp, then top with the last few raspberries.
• Stick in a rolled tuile or cigarillo and mint sprig.
• Serve immediately with long handled spoons.

Parsi Mutton Cutlets

Parsi Mutton Cutlets Recipe by Chef Aditya Bal  Quick and fuss free cutlets that can be made in advance and stored Mutton mince potatoes herbs and spices come together to make these delights the Parsi mutton cutlets They are succulent and delicious.

Ingredients;

1. Mutton mince – 250 gm
2. Ginger paste – 1 tsp
3. Garlic paste – 1 tsp
4. Green chilli – 1- coarsely ground
5. Turmeric – 1/2 tsp
6. Red chilli powder – 1 tsp
7. Clove-cinnamon powder – 1/2 tsp
8. Potatoes – 2 Tbsp- boiled and mashed
9. Pudina leaves – 5-6- chopped coarsley
10. Chopped coriander – 1 Tbsp
11. Salt, to taste
12. Bread crumbs, to coat
13. Eggs – 4- whisked (to coat the cutlets)
14. Oil to deep fry

Method;

• In a bowl take the mince and massage it with your hands for 3-4 minutes.
• Now add the ginger paste, garlic paste, green chilli, turmeric, red chilli powder, clove-cinnamon powder, mashed potato, pudina, dhaniya and salt. Mix it well.
• Make medium sized round patties (makes around 5-6). Coat the cutlets with bread crumbs from both sides.
• Refrigerate for 30 minutes.
• Whisk eggs. Coat the refrigerated cutlets in the egg mixture.
• Deep fry in hot oil till golden brown from both sides.
• Serve with sliced onions and chutney. Squeeze some lemon juice on top if you want.

Thai Mutton Leg Roast is Delicious Dish It can be prepared specially in Eid-ul-Adha in Pakistan

It is served with Boiled Eggs & French Fries.

Ingredients:

1. Mutton leg – 1 – 1 ½ kg
2. Hoisin sauce -2 tbsp
3. Soya sauce – 2 tbsp
4. Sriracha sauce – 4 tbsp
5. Sweet & sour sauce – 2 tbsp
6. Thai red curry paste – 2 tbsp
7. Lemon juice – 1/4 cup
8. Curry leaves handful
9. Ginger garlic paste – 1 tbsp
10. Salt 1 tsp
11. Baby onions – 8 – 10
12. Boiled eggs – 2
13. French fries – 1 cup

Method:

• Boil mutton leg with ginger garlic paste, salt, and 4 cups of water,
• until tender, keep aside. Heat quarter cup oil in a pan and add all the seasoning and sauces,
• fried till oils comes on top. Add mutton leg with half cup water, and baby onions cook until done.
• Remove on a platter, serve garnish with fries, baby onions and boiled egg.

7. Salt – 1 tsp heaped
8. Tomatoes chopped – 4
9. Green chilies chopped – 4
10. Ginger julienne – 1 tbsp
11. Oil – ½ cup
12. Coriander leaves chopped – 2 tbsp
13. Mint leaves chopped – 10
14. Spring onion chopped with leaf – ½ cups

Method:

• Heat oil and fry onion until light golden Now add ginger garlic paste.
• Then put mince with salt, add 1 cup water, cover it and cook until keema is approx ready.
• Then put tomatoes sliced with chili powder, cumin, coriander powder, salt, all spice and
  chili garlic sauce, cover it and cook until mince tender.
• In end, put green chilies chopped, ginger julienne and coriander leaves it at dum.
• Keep on simmer and serve with naan.

Tuna Bean Salad can be healthy satisfying meals on their own or perfect accompaniments to main dishes salad is a good dish for dinners tuna with a yogurt and tahini dressing.

Ingredients:

1. Chickpeas – One 15-ounce can, rinsed and drained
2. Red kidney beans – One 15-ounce can, rinsed and dra
3. Green beans – 6 ounces, trimmed and sliced into 1/4-inch rounds
4. Onion – 1/2 medium, finely chopped (about 1/2 cup)
5. Piquante peppers – 12 sweet, such as Peppadews, chopped, plus 2 tablespoons brine
6. Freshly squeezed lemon juice – 2 tbsp (from 1 lemon)
7. Extra-virgin olive oil – 2 tbsp
8. Kosher salt and freshly ground pepper
9. Plain yogurt – 1 cup
10. Tahini – 1/4 cup
11. Head red leaf lettuce – 1 large, chopped (about 12 ounces)
12. White albacore tuna in oil – Two 5-ounce cans, drained
13. Smoked paprika – 1/2 tsp

Method;

• Stir together the chickpeas, kidney beans, green beans, onions, peppadews, brine, 1 tbsp lemon juice and the olive oil in a medium bowl Season with salt and pepper .Whisk together the yogurt and tahini until smooth.
• Season with salt and pepper Toss the lettuce with the remaining 1 tbsp lemon juice and a pinch of salt.
• Divide the lettuce among 4 plates top with the bean mixture and then the tuna.
• Drizzle with the yogurt dressing and sprinkle with the smoked paprika Toss together just before eating,

Raspberry Ripple Ice Cream Recipe

Ingredients:

1. raspberries – 250g plus extra to serve, if you like
2. caster sugar – 225g
3. large eggs – 2 plus 4 egg yolks
4. double – 600ml
5. sliced mango, sprinkles, or cones, to serve
6. Compare prices

Method;

• Place the raspberries and 2 tbsp of the sugar in a small pan.
• Cook on a medium heat until sugar dissolves.
• Simmer for 5 mins until thickened, then push through a sieve into a bowl and discard the seeds left in the sieve.
• Place the eggs, egg yolks and remaining sugar in a bowl.
• Whisk with an electric whisk to combine, then place over a pan of gently simmering water – make sure the bowl isn’t actually touching the water.
• Beat with the electric whisk for 3-4 mins until thick and pale.
• Remove from heat and continue beating until cool.
• In another bowl, whisk the cream until it forms soft peaks, then gently fold into the cool egg mix until just combined.
• Pour the mix into a shallow container or dish that can be frozen.
• Gently swirl the raspberry coulis through, cover with cling film and freeze for at least 6 hours.
• Serve scoops in bowls with sliced mango and extra raspberries, or scoop into cones and top with sprinkles for the kids.

12. Capsicum – 1 julienne
13. Corn flour – 1tsp

Method:

• Heat oil and fry ginger garlic, tomatoes, yogurt, turmeric, red pepper, white cumin, all spice and salt until tomatoes tender.
• Now add beef and fry more until meat tender.
• Then put capsicum, green chilies and 1 cup water for gravy.
• Thicken with corn flour paste.

Ingredients:

1. Fresh Carrots – 2 kg grated
2. Milk – 1 ½ kg
3. Ghee – 1 cup
4. Green cardamom – 10 to 12 whole
5. Sugar – 1 ¼ cup
6. Khoya – 1 cup
7. Saffron – ½ tsp
8. Almonds and pistachio sliced- 2 tbsp each

Method:

• Peel and grate carrots and cook in milk when milk half dries add sugar and cook till sugar further till water from it completely dries up.
• Heat up ghee in another pan once hot add for green cardamom, once cardamoms swell a bit pour this ghee in the pot containing carrots mixture and fry well for 20 minutes.
• Lastly add Khoya, saffron, almonds and pistachio sliced, leave it on dum for 10 minutes over it.
